1 1/2 pounds ground beef (I used 80/20)
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)

Before I got ready to make this casserole, I let the Crispy Crowns sit on the counter to defrost for an hour or so. The original recipe used still frozen tater tots, but I felt they wouldn’t cook as well if they were still frozen solid.

In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.

In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

Grease a 9×13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 – 30 minutes, or until golden brown and crunchy.

*Note – The second time I made this I prepared it the night before and stuck it in the fridge overnight. I took it out about an hour before I wanted to bake it, just so it could come to room temperature a bit. I think it was even better than the first one!

Ingredients

Serves : 4

  • 4-6 tablespoons olive oil
  • 4 lamb shanks, trimmed
  • 5 tablespoons flour
  • 1 leek, halved and cut into 1cm pieces
  • 2 stalks celery, roughly chopped
  • 2 carrots, roughly chopped
  • 2 medium onions, chopped
  • 12 garlic cloves, unpeeled
  • 1 bay leaf
  • 1 teaspoon whole black peppercorns
  • 1 sprig of thyme
  • 1 sprig of rosemary
  • 350ml red wine
  • 600ml chicken stock
  • Sea salt

Directions

  1. Pre-heat oven to 150 degrees C .
  2. Heat the olive oil in a heavy, metal baking dish on a hotplate over medium-high heat. Toss shanks with flour to coat well; then shake off excess. Sear the shanks in hot oil until well browned on all sides, then remove from the dish and set aside.
  3. Add the leek, celery, carrot, onion and garlic to the baking dish. Cook until softened and lightly browned, stirring constantly; about 5 minutes.
  4. Season with the bay leaf, peppercorns, thyme and rosemary sprigs. Pour in the red wine and chicken stock, increase heat to high and bring to a simmer.
  5. Season to taste with sea salt and place the lamb shanks on top of the vegetables.
  6. Cover the baking dish tightly with foil and place into the preheated oven. Bake gently until the meat is tender and falls off of the bone, 2 1/2 to 3 hours.
  7. Remove the bay leaf and herb stems before serving shanks with vegetables and sauce.

I used frozen hash browns but if you wanted to do the work I’m sure 2 pounds of diced potatoes would work just as well. This Cracker Barrel’s Hash Brown Casserole is very simple to make and is delicious. We had left over’s so I froze some of it to take to work with me; it freezes just great.

Ingredients

2 lbs frozen hash browns

1/2 cup margarine or 1/2 cup butter, melted

1 (10 1/4 ounce) can cream of chicken soup

1 pint sour cream

1/2 cup onion, peeled and chopped

2 cups cheddar cheese, grated

1 teaspoon salt

1/4 teaspoon pepper

Directions

1. Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.

2. Mix the above ingredients together, separate the cheese so you have enough left to garnish the top. Place in prepared pan and bake for 45 minutes; remove from the oven and garnish the top with the remaining cheese. Then place back in the oven and bake until brown on top.
