Ingredients

  • 300ml thickened cream
  • 300ml milk
  • 6 eggs, beaten lightly
  • ¾ cup (165g) caster sugar
  • 1 teaspoon vanilla extract
  • 50g butter
  • 8 slices white bread
  • 2 small (260g) bananas, sliced diagonally
  • 1⁄3 cup (55g) sultanas
  • ¼ cup (80g) apricot jam
  • ¼ cup (20g) flaked almonds

Preparation method

In a large mixing bowl, combine cream, milk, eggs, sugar and vanilla.

Butter the bread and trim off the crusts. The bread can be cut into rectangles or triangles, depending on the shape of
your dish.

Lightly grease an ovenproof dish (2 litres/8-cup capacity). Arrange 1/3 of the bread in dish. Top with ½ the banana and sultanas. Pour over 1/3 of the egg mixture. Repeat, then place the remaining bread on top. Pour remaining egg mixture into the dish. Stand for 20 minutes.

Meanwhile, preheat oven to 180°C (160°C fan-forced). Bake pudding for about 30 minutes or until set.

Heat the jam in the microwave on HIGH (100%) for about 30 seconds or until liquid. Remove pudding from the oven. Brush the top with jam. Sprinkle with almonds and return to the oven for 5 minutes. Serve warm with cream, if desired.

  • 3 ½ cups flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda

  • 3 ½ cups brown sugar
  • 1 ½ cups sultanas
  • 1 ½ cups walnuts
  • 5 cups grated golden kumara, about 2 large kumara
  • 5 eggs
  • 350 ml oil
  • 2 tablespoons fresh orange juice
  • grated rind of 3 oranges

Method
Preheat oven to 180°C.  Spray a large deep 28 – 30 cm spring form cake tin with non-stick baking spray and line the base with non-stick baking paper.

Place all the dry ingredients in a large bowl.  Mix in the grated kumara.  In a separate bowl beat the eggs, oil, orange juice and rind together then mix into the dry ingredients.  Pour into the prepared tin and bake for 45 minutes, then turn the oven down to 160°C and bake a further 30 – 35 minutes, until pulling away from the sides of the tin and cooked in the middles when tested with a cake skewer.  Turn out and cool on a wire rack.  Frost when cold.

For the frosting – 
400 g cream cheese, not softened variety
100 g butter, softened to room temperature
grated rind of 2 oranges
4 cups, approximately, icing sugar

Beat all ingredients together until whipped smooth and a good spreading consistency, then frost the top of the cake.  Can chopped nuts can be sprinkled over if desired.

  • 2 medium onions, finely chopped
  • 500 g pork mince
  • 1 egg

  • 250 g tub sour cream

Method
Mix onion, pork, egg, salt & pepper and 2 tablespoons of the dill. Reserve the rest remaining dill to garnish.  I find disposable gloves the best for this job – shape into 12 – 15 meatballs.

Heat oil in a non-stick frypan and fry meatballs until golden brown – about 10 – 12 minutes. Drain on paper towels.  Tip out any excess fat from the pan then add sour cream, Worcestershire sauce and mustard to pan. Stir to mix well.  Serve the sauce over the meatballs with noodles or mashed potato.  Sprinkle with dill to garnish.

You can substitute minced lamb or beef with the pork if desired.

  • 3 egg whites (at room temperature)

Method

In a large metal, porcelain or glass (ie. not plastic) bowl beat egg whites until soft peaks form. A hand-held electric mixer is ideal for the job. Gradually, a teaspoon at a time, add the caster sugar. (I emphasise, add the sugar slowly). The mixture should be getting glossy, thick and shiny with each addition and the whole sugar adding process should take about 10 minutes. Beat in the essence, vinegar and cornflour. Spoon mixture out into little’blobs’ onto a baking paper covered baking tray.

Bake in a low 110-120°C oven for approximately 45 minutes for individual meringues. The meringue should be crisp and dry and easily lift off the baking paper.

Cool on a wire rack.

CHOCOLATE COFFEE SAUCE
300 ml cream
375 g dark chocolate (1 packet dark chocolate melts)
3 tablespoons coffee essence (or similar)

In a small saucepan or the microwave, melt ingredients and stir until smooth. Squash two meringues together (like a sandwich) and pour chocolate sauce over the top. Sauce sets solid when refrigerated, so serve warm.

WHIPPED CREAM
300 ml cream
2 tablespoons sweetened coffee essence
strong sweetened espresso coffee or coffee liqueur

Whip the cream, fold in the coffee essence, espresso or liquer, and fill the meringues.

For the frosting –
Using an electric mixer, beat al ingredients until smoothly combined.  Spread on cold cupcakes.

1/4 teaspoon olive oil
1 carrot, peeled and coarsely grated
8 spring onions, chopped, green tops included
250 g baby spinach or rocket leaves, well rinsed

250 g reduced fat ricotta cheese
4 tablespoons grated or shredded parmesan cheese
1 egg, separated
pinch each of pepper and nutmeg
8 large sheets filo pastry
2 tablespoons olive oil
2 tablespoons sesame seeds

Cooking method

1. Preheat the oven to 200°C. Brush the 1/4 teaspoon oil over a baking tray.
2. Heat 1 tablespoon water in a large saucepan and add the carrots, spring onions, spinach and garlic. Cover and cook over a medium heat for 5 minutes, stirring occasionally. Remove from the heat and set aside to cool.
3. Mix the ricotta, parmesan and egg white in a bowl, then combine with the vegetable mixture, pepper and nutmeg.
4. Work with 4 sheets of pastry at a time. Spread out 2 sheets of pastry on the bench and brush lightly with oil. Top with another two sheets of pastry and brush with oil.
5. Arrange half of the vegetable mixture in a row along the edge of the pastry closest to you, extending it right to the edges. Roll the pastry up firmly to form a long roll. Using a sharp knife, cut the roll into 3 or 6 slices. Repeat with the remaining pastry, oil and filling.
6. Arrange the rolls, seam side down, on the prepared baking tray. Brush with the reserved egg yolk and sprinkle with the sesame seeds.

2 tablespoons olive oil
1kg baby new potatoes
2kg lamb leg
2 sprigs fresh rosemary, chopped coarsely

3 cloves garlic, crushed
1 tablespoon finely grated lemon rind
2 tablespoons lemon juice
1/2 cup (125ml) beef stock

Preparation method

1. Heat half the oil in large frying pan; cook potatoes until browned. Transfer to 4.5-litre (18-cup) slow cooker.
2. Make small cuts in lamb at 2.5cm intervals; press rosemary into cuts. Combine remaining oil, parsley, oregano, garlic, rind and juice in small bowl; rub mixture all over lamb; season.
3. Cook lamb in same heated pan until browned all over. Place lamb on top of potatoes; add stock. Cook, covered, on low, 8 hours.
4. Remove lamb and potatoes; cover lamb; stand 10 minutes before slicing.
5. Serve lamb with potatoes and sauce. Accompany with a Greek salad or steamed spinach, if desired.

Not suitable to freeze or microwave.

COOK’S NOTE: Lamb can be covered and refrigerated overnight at step 2. If you do not have a slow cooker, roast the lamb after browning in a slow oven 120°C/100°C fan forced for approximately 4-5 hours or until very tender. Cover with foil for the first half of cooking time.

What You’ll Need

4 boneless pork chops, 3/4-inch thick (about 1 pound)
1/2 teaspoon lemon pepper seasoning
1 tablespoon vegetable oil
1 cup sliced mushrooms (about 3 ounces)
1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1/4 cup milk
2 tablespoons Chablis or other dry white wine
1 tablespoon Dijon-style mustard

How to Make It

Season the pork with the lemon pepper.

Heat the oil in a 10-inch skillet over medium-high heat.  Add the pork and cook for 6 minutes or until browned on both sides.  Remove the pork from the skillet.

Add the mushrooms to the skillet.  Reduce the heat to medium.  Cook until the mushrooms are tender, stirring occasionally.

Stir the soup, milk, wine and mustard in the skillet and heat to a boil.  Return the pork to the skillet.  Reduce the heat to low.  Cover and cook for 10 minutes or until the pork is cooked through.

Ingredients

Serves: 4
  • 4 (100g) skinless, boneless chicken breast fillets
  • salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, peeled and minced
  • 1 (2cm) piece fresh ginger root, minced
  • 2 mangoes, peeled and diced
  • 2 tablespoons cider vinegar
  • 1 teaspoon white wine
  • 4 tablespoons chopped fresh coriander

Preparation method
Prep: 10 minutes | Cook: 25 minutes

Preheat barbecue on high heat, and lightly oil cooking grate.
Rub chicken breast fillets with salt and pepper.
Cook on hot barbecue for 10 to 15 minutes on each side, until no longer pink and juices run clear.
Remove from heat, set aside, and keep warm.
Heat oil in a frying pan over medium heat, and sauté garlic for about 1 minute.
Add ginger and mangoes and cook 3 to 4 minutes until mangoes are tender.
Add the cider vinegar and white wine.
Season with salt and pepper.
Stir in coriander, and remove from heat.
Spoon frying pan mixture over the barbecued chicken to serve.
