To serve

  • 1 small red onion, finely diced
  • corn tortillas, sliced and baked

Method

  1. Toast the chillies in a hot dry frying pan for a few moments (they will puff up a bit), then remove. Deseed and stem chillies, and soak in boiling water for 15 mins.
  2. Heat the olive oil in a large saucepan over a medium heat. Add the onion and garlic, season and cook for about 5 mins or until softened. Add the chipotle paste, reconstituted chillies, cumin, stock and tomatoes. Sauté for 5 mins, then purée until very fine in a blender. Pour back into the pan and bring to the boil. Reduce the heat and simmer for 10 mins. When close to eating, add the prawns, fish fillets, clams and potatoes. Place a lid on top and cook for 5 mins over a medium-high heat. Add the lime juice and serve with lime wedges, avocado, coriander, red onion and tortilla chips for sprinkling over.

They made their debut with the novelty number “Haunted House” and signed up with the MGM music label. The follow-up songs “Ju Ju Hand” and “Ring Dang Do” were minor chart successes. The band scored their greatest smash hit with the wonderfully raucous “Wooly Bully,” which sold over three million copies and stayed on the Billboard Top 40 charts for 18 weeks (the song peaked at #2 on the pop charts). “Wooly Bully” was named Record of the Year for 1965 by “Billboard” magazine. The bubbly “Li’l Red Riding Hood” likewise did very well; it peaked at #2 on the Billboard pop charts for two weeks straight.   • 375g pack ready rolled puff pastry, thawed if frozen
  • 6 tbsp ready made pasta sauce (not too chunky)
  • 100g wafer thin ham
  • 100g mature cheddar, grated
  • 1 egg, beaten
  • 1 tsp dried oregano or mixed herbs

Method

  1. Preheat oven to fan 180C/conventional 200C/gas 6. Unroll the pastry onto a lightly floured surface and roll it out to 40 x 32cm. Spread a layer of pasta sauce over it, leaving a 1cm border around the edges. Arrange the ham evenly on top, then scatter the grated cheese over.
  2. Starting at one of the short ends, roll the pastry up as tightly as possible. Chill in the fridge for 10 minutes or so.
  3. Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.
